Introduction

This skillet dish is nutritious and easy to fix. We usually buy ground beef and cook it ahead, draining it, and storing in 8 oz. quantities in the freezer. Ingredients

    8 oz. lean ground beef
    1/3 large green pepper, chopped
    medium onion, diced
    1 can diced tomatoes
    1 1/3 cups Minute Rice
    1 cup water (or more as needed)

Tips

I especially enjoy this dish when it gets just a little browned after the vegetables have cooked. The cooked onion will carmelize a little at the end of cooking which adds to the flavor.


Directions

In large skillet brown lean ground beef with chopped green pepper and onion and small amount of water to steam until vegetables have cooked just through. Add can of chopped tomatoes including juice. Add 1 1/3 cups of white Minute Rice. Add cup of water and cook until rice is cooked and and most of water has been absorbed. Add small amount of chili powder to give the dish more interest.

Serving Size: Makes about 6 1-cup servings
