Ingredients

    1 cup uncooked rice
    1 cup uncooked brown lentils (don't use red!)
    1/2 medium yellow or white onion chopped
    2 tsp cumin
    2 pinches cinnamon
    1/2 tsp salt
    3 1/2 cups water
    1 tablespoon olive oil

Tips

This is traditionally served topped with a couple of carmelized onions but I usually leave this out. This keeps in the fridge for about a week and freezes very well. I usually eat about a half cup at a time. Also supposed to be great with yogurt but I haven't tried this.


Directions

cook chopped up onion until brown in olive oil. Add lentils and 3 1/2 cups water and salt. bring to a boil. Once this starts boiling turn heat to low, cover and simmer for 20 minutes. After 20 minutes add rice, cumin, cinnamon and simmer for another 20 minutes until all water is absorbed.
