Introduction
I created this recipe to have something quick that I could microwave to have a hot meal without having to go to all the trouble of cooking a hot meal. I am using the Weight Watchers Points Plus plan to lose weight. I do not go to the meetings, just doing it on my own at home. Ingredients

1.5 lbs. extra lean ground beef
1.5 cups chopped onion
.5 cup chopped bell pepper
1 Tlbs olive oil
1 t. garlic powder
1 14.5 oz can of petite diced tomatoes (including liquid)
.5 cup prepared barbeque sauce (I use Sweet Baby Rays )
Tips
I am only cooking for myself. With this recipe, I usually fill a regular muffin pan with almost 1/2 cup of the mixture then freeze. When frozen, I take them out of the muffin pan and place them in individually in zip sandwich bags then into a larger zip freezer bag. That way when I want a barbeque sandwich, I only have to remove one sandwich bag of barbeque and thaw and heat in the microwave. Great on flat bread or tortillas as well as buns. This recipe works well with chicken and pork also. 5 Points per 1/2 cup serving for those following Weight Watcher's Points Plus. I usually eat this on 1/2 of a Flatout multigrain with flax which adds another 1.5 points.
Directions
Chop onions and bell peppers and saute in 1/2 of the olive oil until tender but not browned. Season to taste with salt and pepper. Transfer to a bowl then add remaining olive oil to the pan and then the meat and brown. Season meat with salt, pepper, and garlic powder. When meat is browned and all liquid is gone from pan, add the sauted onion and bell peppers to meat and combine. Add 1 14.5 oz can of petite diced tomatoes and 1/2 cup of barbeque sauce and combine well. Taste to see if you need to add additional salt and pepper. Cover pan with lid and reduce heat to simmer and cook for 30 to 45 minutes Mixture should still be wet but not soupy. Serve on whole wheat bun or whole wheat toast points.
