Ingredients

2 cups warm water
1/3 cup honey
1 Tbsp yeast
1/3 cup extra virgin olive oil
1 tsp salt
5 and 1/2 cups flour
Tips
I used Kitchen aid mixer with dough hook as I find easier to knead. This bread can also be mixed and kneaded by hand.
Directions
In a large mixing bowl or mixer, combine warm water, yeast and honey. Let sit for a few minutes until yeast starts to foam.
Add salt, oil and 3 cups flour. Continue to add flour until dough does not stick to side of bowl.
Knead for 7-10 minutes if using a stand up mixer with dough hook, or 10-15 minutes by hand.
Let rise until double in size. Punch down dough and divide into 2 pieces. Form into 2 loaves and set in bread pan.
Let rise in slightly warm oven (turn oven on for about 2 minutes and then shut off) until dough is about 1 inch above pan.
Turn oven to 350 F without taking bread out. Bake for 30 minutes or until golden brown.
