    1.25 pounds boneless, skinless chicken thighs
    1/2 medium onion, cut into wedges
    3/4 cup water or chicken stock
    salt and pepper to taste
    1 cup (or more) Sweet Baby Ray's Honey Chipotle BBQ Sauce (or other favorite/homemade)


You can add any spiced to the chicken thighs before starting the slow cooker. Try crushed red pepper flakes for some heat, or garlic powder.


Placed the cut onion into the bottom of your slow cooker. Salt and pepper the chicken thighs and place on top of the onions. Add the water/stock. Cook on low for 8 hours (or 4 hours on high). Remove chicken from pot and pull apart with two forks. Mix with BBQ sauce and serve hot on a bun or alone.

Serving Size: Makes enough for about 4 big sandwiches
