Ingredients

16oz Bowtie pasta
3C fresh mushrooms, sliced
4 medium whole ripe tomatoes, chopped
2T extra virgin olive oil
4T marsala cooking wine
2tsp Italian seasoning
1 medium onion, sliced
1/4tsp crushed red pepper
4C fresh spinach
2 cloved minced garlic
salt to taste
Tips
Serve with grated parmesean cheese if you like.
Directions
Cook pasta according to package instructions.
Meanwhile, in a large skillet, warm olive oil. Add garlic, mushrooms, tomatoes, onion, italian seasoning, and crushed red pepper. Saute until mushrooms start to release their water. Add marsala cooking wine and allow to reduce the liquid further (approximately 5-8 minutes). Add spinach and cover pan to allow it to wilt. Drain pasta, reserving 1/2 cup of the starchy cooking liquid, and add to pan. Stir and then add cooking liquid to thicken up the sauce.
Serving Size: Makes 6-2 cup servings
