Introduction

Ingredients

1 beet, raw
5 medium baby carrots
3 cups shredded red cabbage
1/8 cup broccoli spears
3 tbsp vinegar
1 tbsp light mayo
1 tbsp (or less) honey
2 tbsp almond milk
black pepper, to taste
Tips
The key thing you want to do is really finely shred the red cabbage. This allows it to soak up the dressing.
Feel free to toss in/shred whatever other veggies you have on hand!
If I'm craving a little sweets, I'll add some raisins on top of the final product.
Directions
First whisk together vinegar, mayo, honey, and almond milk.
Then, in a food processor (or by hand), shred the red cabbage until you get 3 cups. Toss with the dressing. Then toss the rest of the veggies into the food processor and shred them lightly (not too much otherwise you'll just have mush!) and toss them with the dressing + cabbage.
Sprinkle with black pepper to taste.
Serving Size: Makes roughly 4 1-cup servings
