    1 cup zucchini shredded
    2 smashed nice and ripe banana
    4 eggs (large - whites only)
    1/4 cup melted coconut oil
    1/3 cup honey (or agave nectar)
    1 tsp vanilla extract
    1/4 cup almond butter
    1/2 cup coconut flour (bulk barn)
    1 tsp baking soda
    1/2 tsp baking powder
    1/4 tsp salt
    1 tsp cinnamon


This bread does not rise. It is moist yet crumbly. Best to refrigerate or slice and freeze. Best if toasted in toaster oven as it gives the bread a bit of crispness. Enjoy.


In a medium bowl, mix wet ingredients together (zucchini thru almond butter). In separate bowl, mix dry ingredient together (coconut flour thru cinnamon). Now combine wet ingredients with dry ingredients. Mix together until well combined and then pour into a greased load pan. Bake 350 degrees for about 30-35 minutes
