Ingredients

    1 540 ml can Chick Peas
    1 540 ml can Six Bean Blend (Kidney beans, black eye peas, white kidney beans, romano beans, baby lima beans, chickpeas) (Can substitute for other can of beans or bean mix)
    1 Med. Red Bell Pepper
    3 Sprigs Parsley
    2 Cloves Garlic
    4 Tblsp. Extra Virgin Olive Oil
    2 Tblsp. Balsamic Vinegar
    Salt & Pepper to taste

Directions

1. Drain and rinse beans. Put in big mixing/serving bowl.
2. Chop bell pepper and parsley. Add to beans.
3. Mince Garlic. Add to bean/pepper mix.
4. Add olive oil, balsamic vinegar, salt & pepper.
5. Place in fridge to cool.

Serving Size: 4 - 1 1/3 cup servings
