Ingredients

2.5 cups flour
1 tsp. baking powder
1/2 tsp. salt
1.5 cups sugar
1 stick butter (unsalted)
2 large eggs
1/2 tsp. vanilla extract
1.5 cups craisins
1 cup white chocolate chips
1 egg white for egg wash
Directions
Sift flour, baking powder and salt together into small bowl.
In medium bowl, cream together sugar, butter, eggs and vanilla. Add flour mixture. Using a spoon, incorporate craisins and white chocolate.
Form two logs approximately 1"x2.5"x9.5" each. Place parchment paper on cookie sheet, and evenly space the two logs on the paper. Beat egg white until foamy, and brush on top and sides of each log. Bake in 350 degree oven for about 30-35 minutes, until golden brown.
Remove from oven and allow entire pan to cool completely on cookie rack. Remove the cooled logs from the pan. Using serrated knife, slice logs on a diagonal into 1/2" slices. I find it useful to incorporate some downward force (more so than slicing bread).
Place slices on cookie sheet and bake in 350 degree oven for 10 minutes. Turn over and bake again about 5 minutes, until just beginning to color. Remove to rack to cool.
