Ingredients

    1.5 onions, chopped
    3 cloves garlic, minced
    2 tsp olive oil
    3 large peppers: red, orange, yellow (skin removed)
    3 zucchini
    1 large eggplant
    0.5 c. Trader Joe's Organic Tomato Sauce
    Basil, chopped
    Salt and Pepper to taste

Tips

One serving=approximately 7oz


Directions

Saute the onions in the oil. Add remaining ingredients, except for the basil. Cover and cook until vegetables are done. Add basil last.
