Ingredients

2 1/4 Cups Rice Krispies
2 Tablespoons Ground Flax Seed
1/4 Cup Chopped Peanuts
1/4 Cup Chopped Dried Fruit (Cranberries)
2 Tablespoons Flaked Coconut
1 Teaspoon Vanilla Extract
1 Teaspoon Orange Extract
1/2 Cup Creamy Peanut Butter
1/2 Cup Brown Rice Syrup
Salt to taste
Cinnamon to taste
1 1/4 to 1 1/2 Cups White Chocolate Chips, Melted
Tips
If you wanted, instead of covering the granola bars with white chocolate, you could just add 1/4 cup of white chocolate chips to the dry ingredients before placing the bars in the freezer.
Directions
Mix the rice krispies, flax, peanuts, dried fruit, and coconut in a large bowl. Microwave peanut butter and brown rice syrup until runny (about thirty seconds). Add the wet ingredients to the dry ingredients, making sure that everything gets sticky. Add salt and cinnamon to suit your taste.
Line a 7" x 11" pan with parchment paper, and pour the mix in. Cover with another layer of parchment paper and squish to fit the pan. Stick this in the freezer for about 20 minutes.
Meanwhile, melt the white chocolate chips in a dutch oven. Remove the granola bars from the freezer, and pour/spread the white chocolate over the bars. Place it back in the freezer for another 20 minutes or so to allow it to set. Then cut into 12-16 (I got 16) bars, and enjoy!
