Introduction

Ingredients

    Flour, white, 1 1/3 cup
    Brown Sugar, 1.5 cup, packed
    Ghiradelli chocolate powder or "double chocolate" hot cocoa. Comes in gold can. *key ingredient 1.5 cup
    Butter, salted, .5 cup
    Plain Pumpkin, canned, without salt, 1.25 cup (NOT pumpkin pie mix, which is has spices in it)
    Semisweet chocolate, .4 cup chips
    ener-g egg replacer, 4.5 tsp (may substitute 3 egg whites if desired)
    1 tsp. salt
    1/2 tsp. baking powder
    2 tsps. vanilla extract




Tips

*For vegans, substitute coconut oil for butter and use vegan chocolate chips.
*for gluten-free, use white rice flour and gluten-free chocolate chips.


Directions

Mix sugar, pumpkin, melted butter in large bowl. Grease a 9 x 13 pan and preheat oven to 350 degrees. Mix egg replacer with 6 tbsp. warm water in separate cup, stirring thoroughly till lumps are gone. Add to sugar mixture.

In medium bowl, mix flour, chocolate powder, salt, baking powder. Gradually mix into wet ingredients. Melt chocolate in microwave on MEDIUM, checking every 30 seconds. Careful, chocolate burns easily. Fold into brownie batter and pour into baking pan.

Bake 20-30 minutes or until a fork comes out clean. May still have a fudgey appearance.

Serving Size: Makes double recipe of brownies or 24 servings.
