Easy to make, just simply toss and serve. This is a great meal to have on a hot summer day. Easy to make, just simply toss and serve. This is a great meal to have on a hot summer day.
Number of Servings: 1


    2 cups fresh spinach leaves, washed
    3 oz boneless chicken breast
    1/4 cup fresh blueberries
    1/2 cup sliced fresh strawberries
    2 Tbsp (1 oz) blue cheese crumbles
    1 Tbsp sliced almonds
    2 Tbsp Lite Raspberry Vinaigrette


Recipe is written for one serving. Amounts of listed ingredients may be increased in order to make more than one serving.


Grill chicken until tender. Slice into thin strips and allow to cool. Rinse spinach and place in bowl along with blueberries, strawberries, blue cheese crumbles. Toss with Raspberry Vinaigrette salad dressing. Sprinkle almonds on top of of tossed salad. Layer sliced chicken on top of salad. Place on salad plate and serve.
