Introduction

Ingredients

    Wet Ingredients:
    1 15oz can pumpkin (salt-free)
    .5 c apple sauce (no sugar added)
    3 egg whites (large)
    1.25 c sucralose for baking (like Splenda)

    Dry Ingredients:
    1.5 c white whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1 tbsp pumpkin pie spice
    .5 tsp salt

    Topping:
    1 tbsp sugar
    1 tbsp cinnamon

Tips

My oven's quite wonky, so you'll want to watch your muffins closely. I used a dark pan and pulled the muffins out as soon as the middle wasn't gooey.


Directions

Wisk up the wet ingredients (the sucralose melts into the wet ingredients). In separate bowl, mix up the dry ingredients, then mix the dry ingredients into the wet, just until everything is moist.

Spray muffin pan with no-stick spray and divide mixture evenly into pan. Mix the cinnamon and sugar and sprinkle it on the muffins before baking.

Bake in a 350'F oven for 20-25 minutes.
