Ingredients

    CHICKEN MARINADE

    1/2lb Chicken Breast (Cut into 1" chunks)
    The zest of one whole lemon
    The juice of 1/2 lemon
    2 Tbs Rosemary, chopped (half if using dried)
    2 Tbs Thyme, chopped
    2 Tbs Extra Virgin Olive Oil
    1 tsp coarse salt
    1/2 tsp fresh cracked pepper

    SAUCE

    4 cloves garlic
    1 Tbs whole wheat flour
    2 1/2 C Chicken Broth


    500 grams cooked whole wheat spaghetti, cooked al dente
    1 Tbs Basil
    2 Tbs fresh grated Parmesan
    2 Tbs fresh grated Romano
    6 oz grape tomatoes

Directions

Combine all ingredients for the chicken marinade in a ziploc. Marinate for at least 30 minutes, best if done overnight. Toss in skillet and cook until done, then remove and set aside.

Prepare your garlic gravy by adding 2 Tbs extra virgin olive oil to the skillet. Add the garlic and cook until soft and fragrant. Then add the flour and cook for one minute. Add the chicken broth and allow to thicken

Once the gravy has thickened, toss in the spaghetti and the chicken. Add the basil, Parmesan, and Romano and toss until the cheese is melted. Finally add the grape tomatoes and give one last toss then serve.
