Ingredients

    8 oz. dry Brown Rice Pasta
    2 stalks celery chopped
    1 english cucumber peeled sliced and quartered
    1 cup washed cherry tomatoes
    8 oz Imitation Crab meat cut into cubes

    Tumeric Dressing:
    2 Tbs Light mayonaise
    1 Tbl olive oil
    1 Tb granulated sugar
    1/4 tsp. garlic salt
    1/4 cup distilled white vinegar
    (or white wine vinegar or rice vinegar)
    1 Tbl dry parsley
    1 tsp tumeric
    A few turns of fresh black pepper

    One head Romaine Lettuce



Tips

For more protein, add one cup of garbonzo beans.

Directions

Bring to boil one quart of water and add pasta. Stir for 2 minutes then cover and turn off heat.
Set for 20 minutes.

While the pasta is setting, chop celery and cucumber and add to very large bowl. Then add rinsed tomatoes and imitation crab meat that has been chopped into spoon size pieces.

In small bowl, wisk salad dressing ingredients.
Then pour over ingredients of large bowl and stir gently.
When the pasta is ready, drain rinse and add to large bowl and stir again.
Cover and refrigerate for one hour.
Serve over washed lettuce leaves.

Serving Size: Makes 5 or 6 large salad servings
