And if you measure your dry ingredients the night before, this is an incredibly fast way of getting some tasty nutrition on those rushed mornings.

Ingredients

    1 egg
    2 tsp. baking soda
    1/2 Tbsp. cocoa
    2 Tbsp. sugar
    2 Tbsp. oats

Tips

-Use the largest mug you have!
-Try adding nuts or dried fruit for some variety.
-If you don't want a chocolate muffin, substitute flour for the cocoa powder.


Directions

You'll need a very large mug, preferably one that could hold about 2 c. water. Crack egg into mug; mix in baking powder as thoroughly as possible. Add remaining ingredients and mix well, making sure to scrape sides and bottom of mug. (Note: I like my dark chocolate extremely dark -- if you like things sweeter, you may want another tablespoon of sugar.)

Microwave for about 1:30 to 2 minutes, depending on your microwave. Allow to cool for a few minutes, then tip out onto a plate. The texture will be rather like a sponge cake.

Enjoy with a cup of skim milk.

    Ok, so the original recipe was not good. Tooo much baking soda I believe. I revamped it a bit and lowered the levining to 1/2 tsp of baking POWDER not soda. Added 1 tsp of coco, 2 TBL of Splenda and 2 TBL of oats. added and stirred ingredients WELL as I went. Came out pretty good! Better w/Flax meal - 1/9/16
