Ingredients

    64 oz. vegetable juice cocktail (such as V-8)
    1 pound cooked shrimp, chopped
    2 tablespoons lime juice
    1/2 teaspoon hot pepper sauce
    2 large cucumbers, peeled, seeded, and chopped
    1 medium red onion, chopped
    2 avocados, chopped
    3 tablespoons minced cilantro
    1/2 teaspoon salt
    1/4 teaspoon black pepper

Tips

I love to make this soup on Monday and eat it for lunch all week. It is easily cut in half for fewer portions.


Directions

Combine all ingredients in a very large nonreactive container. Adjust seasonings to taste. Refrigerate. Will keep for several days. Serve with tortilla chips.
