Ingredients

    1-2 lb Beef Roast (recipe calculated for a 2 lb roast and 4 servings)
    Salt, Pepper, Oregano, and Thyme to taste
    1 Cup Low Sodium V-8 (also good with spicy V-8)
    2 Cups sliced raw carrots
    1 Cup sliced raw onion
    4 Small new red potatoes, quartered


Directions

Slice and quarter vegetables, and place around bottom and sides of a slow cooker. Rub meat with seasonings, and place in the center of vegetables. Pour V-8 over all. Cook on high for 4-6 hours or until meat is cooked through and tender.
