1 medium Golden Delicious apple, cored and thinly sliced
2 Tbsp fresh lemon juice
1 cup thinly sliced onion
1 medium red bell pepper, cut into thin strips
1 medium green bell pepper, cut into thin strips
1 tsp olive oil
8 oz cooked turkey breast meat, cut into thin strips
6 whole-wheat pita bread rounds, lightly toasted
1/2 cup Tzatziki Sauce (recipe follows)
Tzatziki Sauce:
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
3 - 4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar or lemon juice
5 to 6 mint leaves, finely minced or dill
optional additions:
2 T. minced onion
2 T. mashed chick peas
Place the yogurt in some cheese cloth, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.
Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Keeps in fridge for a week.

Toss apple with lemon juice; set aside.
In a large nonstick skillet, saute onion and peppers in hot oil, stirring frequently until crisp-tender. Add turkey to skillet, and stir until heated through. Stir in apple mixture.
Lay wraps flat and fill with turkey mixture.spoon on yogurt mixture and roll up.
