Introduction

Ingredients

    1 1/2 c cherries
    1 c old fashioned oats
    1/2 fage 0%
    1/2 c skim milk
    1 tsp almond extract
    1 1/4 cup whole wheat flour
    1 t baking powder
    1/2 t baking soda
    1 t salt
    3 egg whites beat till frothy
    1/4 c unsweetened applesauce
    1/3 c brown sugar
    2 Tbsp Splenda




Tips

Only add 1 cup of whole wheat flour to mix at first, and then use up to 1/4 cup to get to smooth texture (not too liquid) when combining with wet ingredients.


Directions

Preheat oven to 375 degrees. Spray muffin pans with nonstick spray or line with paper liners. Wash cherries, and cut in 1/2 to remove pits. In a small bowl, combine the milk and fage till smooth, add oats, and let stand at room temperature for five minutes. In a medium bowl, combine the flour, baking powder, baking soda, and salt. In a large bowl, use a mixer to beat the eggwhites till frothy, add applesauce, splenda, and brown sugar and beat till well mixed. Add the almond extract and combine. Blend in the oat-milk mixture. Stir in the flour mixture just to combine. Fold in the cherries. Fill muffin cups 3/4 full. Bake 15 minutes or until a toothpick inserted into the center comes out clean.
