Ingredients

    1 medium eggplant 1/2 inch dice
    2 medium zucchini 1/2 inch dice
    1 large onion 1/2 inch dice
    1 28 on diced tomato can
    1 tbsp basil
    2 bay leaves
    1 tsp olive oil
    salt and pepper

Directions

dice all vegetables, put in an oven dish, add tomatoes and seasonnings. cook for 2 hrs at 350. Stir once.
