Introduction

Ingredients

1 large eggplant, sliced
Diced tomatoes, one 14.5 oz can
Chunky pasta sauce (my wife used a seasoned sauce-tomato, garlic & onion)
2 tbsp grated Parmesan cheese
1/2 small onion
1/4 medium green pepper
1/4 medium yellow pepper
1 large egg
1 tsp margarine or butter
Tips
My wife used seasoned pasta sauce and diced tomatoes. You can used unseasoned pasta sauce and diced tomatoes and add your own seasoning.
Directions
Grease bottom of glass baking dish. Dip sliced eggplant in egg and fry in pan coated with non-stick spray until browned. Mix pasta sauce, diced tomatoes, peppers and onions. Coat bottom of dish with small amount of mixture. Take fried eggplant and place on top of mixture in dish lining entire bottom. Pour the rest of the mixture on top of the eggplant and coat with Parmesan cheese. Bake in oven at 400 degrees for about 20 minutes or until eggplant is thoroughly cooked.
