Ingredients

    Flounder (fish), 16 oz
    *Thomas Mini Whole Wheat Pita Pockets, 1 serving or 1 slice bread
    *100% Natural Whole Grain Quaker Oats Rolled Oats 1 cup
    Japanese Style Bread Crumbs, Panko, 2/3 Cup
    Garlic, 3 cloves finely diced
    Parsley, 4 tbsp finely diced
    Egg, fresh, 1 medium
    *1 Portobello Mushroom, Finely Diced
    Romano Cheese (shredded), 2 tbsp
    Salt and pepper to taste
    Vegetable Broth, 1 cup

Tips

Serve with your favorite veggies, I did Peas


Directions

Mix stuffing ingredients together, pour broth over until texture is the right level of wetness, account for the liquid that will come off the mushrooms. Then put a couple of tablespoons onto each fillet and roll with end side down in a cake pan or casserole dish.

Repeat until all fish fillets are done.

May have extra stuffing left.

Bake at 400 deg for 15 minutes then 5 minutes under the broiler to crisp up the top.

Serving Size: makes 8 2 OZ servings of fish.
