Introduction

Pounding the chops thin helps them cook quickly, so watch they don't overcook on the grill. You can marinate them for as little as 15 minutes if you're short on time, or for the full hour if you can. Number of Servings: 4

Ingredients

    1/4 t. black pepper
    1 T. sherry
1 T. reduced sodium soy sauce
2 T. reduced sodium chicken broth
1 T. maple syrup or honey
    1/2 t. dijon mustard
    1/2 t. paprika
2 cloves of garlic, smashed or minced
4 boneless pork loin chops (around 4 oz. each), trimmed of all visible fat

Tips

More than half the marinade is left over after you remove the chops and grill them, so the calorie estimate is based on half the marinade amount. Leftovers are great for another meal the next day.

Directions

Combine first 8 ingredients and set aside. Pound each chop to about 1/3 inch thickness. Put chops and marinade in plastic bag and turn to coat. Marinate for 30 to 60 minutes. When ready to cook, remove chops and pat dry with paper towels. Discard marinade and bag. Grill chops over medium heat, taking care not to over-cook. At this thickness, they will cook pretty quickly, so just a few minutes on each side. Allow to rest before serving.
