Introduction

Number of Servings: 8

Ingredients

    2 oz fresh mozzarella
18-20 oz whole wheat pizza dough (used one from Whole Foods)
    2 oz bleu cheese
1-2 chicken breasts, boiled/baked beforehand and shredded
    1/2 c hot wings sauce
    1/2 c nonfat greek yogurt
1/4 c thinly sliced, halved yellow onion

Directions

Prepare/defrost dough and allow to rise per package instructions. Roll out dough and place on oiled cookie sheet (or if you have a pizza stone, preheat it in oven and prep your pizza spatula to place pizza on stone). My dough required a 500 degree preheated oven.

Cook chicken breast, if needed. Mine was pre-baked. Shred chicken with forks and set to the side. Carmelize the onions. Set to the side. Mix 1/4 c of hot wing sauce, all of the yogurt, and 1 oz of the bleu cheese and stir well. Shred mozzarella and set to side.

Mix remaining hot wing sauce with chicken and stir to coat.

Top pizza with yogurt, then onions, then chicken with sauce, and top with remaining bleu and mozzarella cheeses. Bake for 10 minutes in a 500 degree oven.

Slice and enjoy!
