Ingredients

    10 oz frozen spinach thawed
    2 cups sliced fresh mushrooms
    1/2 cup cheddar cheese
    1 tsp garlic powder
    4 large eggs
    1/2 cup reduced fat sour cream
    1/4 cup milk
    1 9" pie crust thawed
    1/4 cup Parmesan cheese

Tips

Can also use feta cheese
Can also use fresh garlic; saute' with the mushrooms


Directions

Mix thawed spinach, mushrooms, garlic powder and cheddar cheese together in large bowl.
Whisk together sour cream, milk and eggs
Add to spinach mixture
Pour into thawed pie crust
Bake 40 min or until knife comes out clean at 375 degrees
