Ingredients

1 1/2 cups raw oat bran
1/4 cup chopped walnuts
1 medium granny smith apple, chopped into small pieces (or 3/4 cup freeze-dried apple pieces)
2 tbsp vegan, sugar-free, xylitol-based honey (Nature's Hollow brand)
1 1/4 cup unsweetened vanilla almond milk (or unsweetened flax milk)
2 tbsp unsweetened applesauce
1 tbsp baking powder
1 ener-g egg replacer egg (1 1/2 tsp mix with 2 tbsp warm water), PREPARED
up to 2 tbsp PURE stevia (according to taste)
1/2 tsp cinnamon
Tips
These muffins, while AMAZINGLY delicious and addictive, are also a bit wet. It is best to eat then within 2 days (if you don't just gobble them all up immediately like we did). If you want to extend their "shelf life" you can try decreasing the almond milk or, if not on a candida diet, add a little bit of whole-wheat flour.
Directions
Preheat oven to 435f. Combine dry ingredients. Blend in wet ingredients. Bake for 15-17 minutes in preheated oven. Let cool before serving.
