Ingredients

    Bowtie Pasta, uncooked 12 oz./340 g
    Extra Virgin Olive Oil 2TBS
    Chicken Base 1 tsp
    Onions, diced 1 large
    Mushrooms, canned four 4 oz. cans
    Black Pepper .5 TBS
    Salt .5 tsp
    Kasha 1 cup
    Egg, large, beat well 1
    Water 2 cups

Directions

Makes ten 1 cup servings.

Bring 1-quart pot water to boil. Cook and drain Bowtie pasta (varnishkas). Add one tablespoon oil to pasta so it won't stick together.

In a large fry pan, heat oil chicken base, onions, mushrooms, black pepper and salt until the onions are translucent. Add kasha and one well beaten egg. Mix well. Then add two cups of water and mix again. Cover and cook about five minutes, check to see if kasha is done. It may need a bit more time so mix again and cover.

When kasha mixture done, combine with pasta, mix and enjoy hot with a salad or veggie side dish or refrigerate. This is very good on a busy day. Make in morning or night before so you know you have a healthy meal when 7:00PM comes, your stomach rumbles and you realize you haven't eaten.

    O.K.
    I tried with whole wheat pasta to make it healthier. It was heavy; the pasta overpowered the kasha. I'll try it with egg based pasta. Tried again with egg based pasta: lacks flavor and it's still heavy. - 7/3/08
