Ingredients

    1/2 cup dutch cocoa powder
    1/2 cup coconut flour (Bob's Red Mill and Let's Do... Organic are my favorite brands)
    1/3 cup butter or coconut oil
    6 eggs
    1/2 tsp. vanilla
    1/2 tsp. salt
    1/2 cup sugar
    1/2 cup splenda OR an equivalent amount of stevia

Tips

If you're into nuts in your brownies, feel free to add them with the coconut flour. Me, I'd prefer chocolate chips in the mix!


Directions

Melt the butter and cocoa powder together in a small saucepan over low heat. Stir occasionally until it makes a smooth, thin paste.

Beat the eggs lightly, then slowly mix in the sugar and salt until the mixture falls off of the whisk in ribbons. Slowly whisk in the butter mixture and vanilla until smooth. Stir in the coconut flour until the batter is lump-free.

Pour the batter into a well-greased 8x8" pan and bake in a 350-degree oven for 25-35 minutes.

Cut into 12 squares and enjoy!
