Ingredients

    1 large can beef broth
    8 oz v8 juice
    vegetables such as summer squash, zucchini, onion, celery,carrot, brocolli.
    1 can white beans
    1 cup water
    salt and pepper to taste
    garlic powder
    fresh herbs such as parsley, basil, oregano
    pearled barley, cooked (1/2 recipe according to directions)

Tips

Add fresh herds such as basil and parsley. Serve with parmesan cheese.


Directions

Heat oil in soup pot. Saute vegetables slightly. season with salt, pepper, garlic powder. Add beef broth and v8 juice. Add 1 cup water. Bring to simmer. Cook barley according to package directions. Add barley to soup. Simmer 20-30 mins.
