Ingredients

1 sm potato, raw., sliced
1 serving bacon (I used turkey bacon)
1 tbsp Sour Cream (divided)
2 tbsp Chives, chopped
1 slice American Cheese (split in half)
Pinch Garlic Powder, to taste
Pinch Pepper, to taste
2 Slices French Bread (small)
Non-stick cooking spray (I use butter flavor)
1 leaf Romaine Lettuce
1 serving Cherry Tomatoes, sliced, chopped - whatever
Tips
roasting the tomatoes before chopping them, may give them more flavor. Salt to taste. Go easy on the salt because there is a lot already.
Directions
Heat a fry pan over medium heat, spray with no-stick spray. Cut your raw potato into 4 -5 even thickness slices. Place potato slices in heated pan. Sprinkle with salt, pepper and garlic powder. Cook potatoes until browned and crispy. Take potatoes out, set aside. In same pan, cook bacon on medium heat to desired crispiness. When bacon is done, take out, drain, set aside to cool slightly, when cool, crumble. Clean out the pan, of any grease using paper towel or paper napkin to clean all the little "bits" out, if any.
Take your bread, spray one side with cooking spray, set that side down in the pan, on other side, spread 1/2 tbsp sour cream, half a slice of cheese, the potato slices, bacon, chopped chives, lettuce, tomato, half slice of cheese. Take the second slice of bread, spread the remaining 1/2 tbsp sour cream on one side, place that side down, on top of the filling, then spray the outside with cooking spray.
Now fry the sandwich like you would a grilled cheese. You want the outside golden brown.
