Ingredients

4 boneless skinless chicken breasts
2 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp seasoning salt
¼ tsp sesame seeds
¼ garlic salt (or 1 clove of garlic minced)
½ green bell pepper (sliced into strips)
½ large onion (diced into squares)
6 small red potatoes
1 Head of broccoli
10 tiny tomatoes (or more if you like)
½ avocado to top at the end (thinly sliced)
Directions
Place your chicken into a casserole pan, then surround with potatoes and onions.
Add your seasonings then on top of your dish scatter around all the rest of your ingredients, except for the avocado.
Place in oven (covered or uncovered, doesn’t matter) at 350 F for approximately 40-50 minutes.
Remove from the oven, put avocados on the chicken then put back into the oven with broil on for about 3-5 mins. Remove and serve.
Other great ingredients to add to this dish would be mushrooms, parmesan cheese, zucchini, yams, or carrots.
Serving Size: makes 4 2-cup servings
