Ingredients

    1 cup dry quinoa, cooked, drained & cooled
    1 cup fresh corn
    1 jalapeno pepper, diced
    1 medium onion, chopped
    2 cups black or kidney beans
    1 red pepper, diced
    1 medium cucumber, chopped
    1 tblsp (ground) cumin seed
    2 tblsp cilantro
    2 tblsp white balsamic vinegar
    juice of 1 lime

Directions

Mix all ingredients together. Refrigerate.
