Ingredients

    (1) 15.5 oz can Light Red Kidney Beans
    (1) 15.5 oz can Dark Red Kidney Beans
    (1) 15.5 oz can Black Beans
    (1) 15.5 oz can Pinto Beans
    (2) 14.5 oz can Diced Tomatoes (no-salt)
    (1) 10 oz can Mild Rotel
    (1) 11 oz can Shoepeg Corn
    (1) packet Mild Taco Seasoning
    1.25 lbs ground White Turkey Meat

    Optional ingredients:
    Water
    Sour Cream
    Shredded Cheese

Tips

Use Fat-Free ingredients when possible.


Directions

Cook turkey in skillet over medium heat until brown. Drain excess fat and transfer to soup/stock pot. Drain and rinse black beans and add to pot. Add all other ingredients - do not drain and simmer for 5 minutes. Add water if you want a thinner soup. Serve with a small dallop of sour cream and shredded cheese.
