Introduction

Number of Servings: 6

Ingredients

    tbsp olive oil
    1 large onion chopped
    1 large leek chopped
    sliced chorizo
    6 chicken drumsticks skin removed
    3 large carrots sliced
    mushrooms sliced
    2 canned tomatoes
    half bottle of red wine
    2 bay leaves
    tsp thyme
    tsp rosemary
    salt and pepper to taste

Tips

Seal the chiken in the same pan as the chorizo. The juices will give it lovely golden colour.


Directions

1) dust the chicken in the flour and paprika
2)fry the onions and leeks with the chorizo in the olive oil.
3) seal the chicken in the same pan
4) add all the ingredients to a casserole dish
5) put into a perheaed oven and cook for 90 minutes
6) eat as it is or with a serving of basmati rice
