Number of Servings: 10

Ingredients

    1/2 head of green cabbage, shredded
    1/4 head of red cabbage, shredded
    1 medium white onion, chopped fine
    1 red bell pepper, chopped fine
    2 large carrots, shredded
    3/4 cup cider or wine vinegar
    4 tablespoons sugar
    1 teaspoon salt
    1 teaspoon black ground pepper
    1/2 cup olive oil

Directions

Shred and chop the vegetables. In a saucepan, heat vinegar, sugar, salt and pepper together until the sugar dissolves. Remove from heat. Add the hot vinegar mixture to the cabbage and mix. Add in all the other vegetables and the oil. Mix. Leave at room temperature for at least 2 hours before refrigerating. Mix occasionally. Best served the next day, or a minimum 5 hours after making.
