Ingredients

    Small to medium Tomatoes, 12
    Basil, fresh, 2-4 tbsp, chopped
    Extra Virgin Olive Oil, 2 tbsp
    Garlic, 1 large clove, halved
    Balsamic Vinegar, 1 tsp
    1 or 2 loaves Ciabatta bread, sliced
    Mozzarella Cheese, fresh, 6 baby, cut in chunks
    Sea salt
    Coarsely ground pepper

Directions

1. Roast the tomatoes in a preheated oven at 425 degrees for about 8 minutes. Cool, peel, and put in bowl.
2. Mix the basil with the oil, pour over the tomatoes and let stand for a few hours or overnight.
3. When ready to serve, char-grill the slices of bread on both sides, then rub with the cut garlic clove. Put the sea salt and pepper in separate small dishes.
4. Drain the tomatoes and reserve the oil. Put the tomatoes in a small dish and strain the oil into another, adding a splash of balsamic vinegar. Add a small dish of the mozzarella.
5. Have guests make their own toasts at the table!
