Ingredients

    1 lb lean beef
    1 cup chopped onion
    2 cloves garlic, chopped
    1 can Goya Pink Beans
    1 can no-salt added diced tomatoes
    1-1/2 cups no-salt added tomato juice
    1 tsp ground coriander
    1/2 tsp ground cumin
    1/4 tsp salt
    1/4 tsp pepper
    1/8 tsp ground red pepper
    1/2 cup canned, no-salt added beef broth
    2 tsp cornstarch

Tips

Can add various toppings - cheese, onion.


Directions

Coat Dutch oven with cooking spray. Heat over med-hi heat until hot. Add beef, cook until browned - stir to crumble. Drain beef, wipe drippings from pan

coat pan with cooking spray. Add onion and garlic, saute until tender (5 min). Add meat, beans and next 8 ingredients, bring to a boil over med-hi. Cover, reduce heat, simmer 15 min stirring occasionally.

Combine beef broth and cornstarch stirring well. Add to beef mixture, bring to a boil stirring constantly. Cook until thickened (1 min)

Serve.
