    1 pound okra, washed and dried
    1/3 cup onion, sliced
    2 tablespoons olive oil
    1 1/2 teaspoons garam masala
    1/2 teaspoon turmeric
    1/4 teaspoon ground coriander
    1/4 teaspoon salt
    1/8 teaspoon cayenne pepper


If you can't handle spice, you can leave out the cayenne pepper and cut back on the other spices.


Preheat the oven to 425F. Cut the tops off the okra pods and split them lengthwise. Toss the okra with the remaining ingredients in a large bowl. Line a baking sheet with aluminum foil and spread the okra mixture out evenly in a thin layer. Bake for 10-15 minutes, or until okra and onions have softened.
