Introduction
This chili can cook all day or simmer for 15 minutes. Great, quick meal at the end of a busy day. Add a can or two or beans (rinsed) if that is your preference. I left them out to keep it low-carb. Ingredients

2 pounds ground meat (all beef, 1/2 turkey 1/2 beef, all turkey)
1 can tomatoes with green chilies (RoTel), undrained
3 cups vegetable or beef stock
4 tablespoons chili powder
1/2 tablespoon ground cumin
1 teaspoon oregano
1 tablespoon crushed red pepper flakes (less for less spicy)
1/2 tablespoon garlic powder (or 4 cloves, fresh)
1/2 tablespoon Splenda granulated
1/2 medium white onion, diced
1 tablespoon Sriracha or Thai garlic-chile paste (optional)
1 tablespoon Louisiana hot sauce or Tabasco (optional)
Tips
If you don't have RoTel on hand you could substitute salsa or stewed tomatoes.
This makes a great topping for chili dogs/burgers.
Try this over steamed rice.
Directions
Brown meat over medium-high heat, drain off excess fat.
Meanwhile combine remaining ingredients, stir well and let stand while meat cooks. I like to put in all in the blender (excluding the meat) since I have a picky eater who hates onions.
When meat is cooked and drained add the chili sauce to the skillet and stir to combine. (If you are adding beans, this is where you would include them.) Bring to a boil, reduce to simmer; uncovered.
Simmer at least 15 minutes. It's great at this point. The longer you simmer it, the better it gets. If you plan on simmering it longer than 15 minutes you would need to cover it.
Serving Size: makes 8 - 1 cup servings
