Ingredients

    Onions, raw, 2 cup, chopped
    Jalapeno Peppers, .25 cup, sliced
    Green Peppers (bell peppers), 0.25 cup, chopped
    *Peppers, sweet, red, fresh, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Olive Oil, .15 cup
    Beans, navy, 1 cup
    *Bush's Cannellini Beans (15.5oz can), 439 gram(s)
    *Onion powder, 1 tbsp
    *Corriander, 1 tsp
    *Cumin seed, 1 tsp
    Chili powder, 3 tbsp
    *Turkey, Ground turkey, 93% lean, 12 oz
    *Dry Roux, 4 tbsp
    Chicken Broth, 6 cup (8 fl oz)
    Red Ripe Tomatoes, 1.5 cup, chopped or sliced

Tips

Next time i might add in some lentils.


Directions

Prep all veggies.
in pot heat .5 olive oil and cook ground turkey - remove from pot to drain.

heat .5 olive oil - saute .75 of the onions until caramelized.
Add in remaining onions and peppers and saute to soft.
Add in spices.
Add in Turkey.
Add in beans
Add in Tomatoes
Add in broth
bring to simmer
Sift in roux to thicken.


Serving Size: Makes about 7 to 8 servings.
