Ingredients

    15 oz canned salmon (without the hunks of skin and bones)
    2 large eggs
    2 tbsp coconut flour
    1 tbsp lime juice
    dash of salt
    1/2 tsp pepper

Tips

I serve this on top of a big spinach salad with salt free sunflower seeds, carrots, cucumber, tomatoes and whatever else I have on hand.


Directions

Mash salmon in a bowl with a fork.
Mix with remaining ingredients.
Form into 4 patties.
Cook in pan sprayed with non-stick spray for 3-5 minutes per side.

    Excellent and easy. I added a half teaspoon of onion powder, and I used coconut oil for frying. - 5/31/16

    Very Good
    Delicious! The coconut flour really soaked up the cooking fat and I had to keep adding oil to the pan. Nonstick spray didn't work at all for me. Otherwise I would give it 5 stars. Next time I'll use almond flour. My husband asked for more and we've already made 4 cans worth of cakes! - 2/22/13
