Ingredients

    1 lb. smoked sausage, sliced thin
    1 lb small red potatoes, sliced
    1 - 3 shallots sliced
    2 ears fresh corn or 2 c frozen
    1t salt
    1t black pepper
    1/2 t dried thyme
    2 T olive oil
    1-1/2 T butter

Tips

This is a throw-in what you got skillet recipe to swap potatoes for another starch (like cooked pasta or rice) or corn for squash, broccoli or other veggie, onions instead of shallots.


Directions

Heat large skillet on med high heat, add oil. Sautee shallots and potatoes in oil until potatoes are starting to brown. Season with salt, pepper and thyme. Add sausage and continue cooking until potatoes are tender. Add corn and butter. Turn heat to low and steam covered for 5 min.
