Introduction

Ingredients
-
-500g-1pound Boneless, Skinless Chicken tenders/strips (raw)
-2 Tablespoons Butter or Margarine
-1 small onion, chopped (can use less onion, I use about 1.5-3 tablespoons, diced
-1 small carrot, sliced - or approx 2 tbsp baby carrots, chopped
-1 can (8 - 10 fl oz) Cream of Potato soup
-1 cup milk
-1 cup frozen corn
(sometimes I also use 1/4 or 1/2 cup of frozen peas, and add them in a minute or two after I add the onion & carrot)
Directions
*Makes 2-4 servings, depending on if you are serving it as a full bowl/main meal, or smaller bowl/appetizer
1. Wash & Cut chicken strips into 1/2 inch - 1 inch pieces
2. Melt butter in saucepan over medium-to-high heat (I set mine to "6")
3. Once butter melts, add chicken - cook and stir for 5 min
4.Add onion and carrot, cook and stir for 3 min
5. Stir in soup, milk, and corn (and peas, if using) - reduce heat a bit (medium to low, I set it at 4 or 5) - stir often
6. Cook for about 8 minutes, or until the corn is tender and chowder is heated through, and add salt/pepper to taste if desired
7. Serve & Enjoy :)
*Serve with a side of garlic bread for a special touch.
