Introduction

Ingredients

    2 Tbsp. olive oil,
    2. Tbsp. curry powder,
    1 cup water,
    2 medium potatoes- cubed,
    2 large carrots- sliced,
    2 cups green beans- sliced,
    1 tsp. salt

Directions

Heat oil in a large pot. Add curry powder and water, then bring to a boil. Add potatoes, beans, and carrots. Simmer 20 to 30 minutes untl veggies are tender. Add salt to taste. Garnish with cilantro if desired.

I like to serve over a bed of rice!
