Italian version of the Portuguese classic Caldo Verde Italian version of the Portuguese classic Caldo Verde

    Olive Oil, 2 tbsp
    Italian Sausage, pork, 3 link, 5/lb
    Onions, raw, 1 large
    Garlic, 1 clove
    Beans, white, 2 cup
    Chicken Broth, 64 fl oz
    Kale, 8 cup, chopped
    Old Bay Seasoning, 1 tbsp
    Salt & Pepper


In sauce pan, heat 2 tbls olive oil, add onion (chopped) and garlic (minced). Sautee for approx 3 minutes. Dice 3 red potatoes, add to pan, cook approx 3 minutes. Remove to crockpot. In same pan, cook sliced sausage about 5 minutes, add to crockpot. Add beans. Cover with 2 quarts chicken broth, and add old bay seasoning, salt & pepper to taste. Cook on low in crock pot for 6 hours, add kale the last hour of cooking.
