Ingredients

    Nopales, cooked 1 Pad (Sliced into thin strips)
    Beans, pinto 2 Cups Fresh
    Olive Oil, 1 tsp
    Peppers, hot chili 4 (dried Chili de Arbol is preferred)
    Garlic, 3 cloves
    Onions raw 2 slices (Chopped)
    Roma Tomatoes, 2 medium (chopped)
    Spinach, 1 cup fresh
    Salt 1 tsp or to taste

Directions

Prep:
Place beans in large pot and cover with water.
Add salt and bring to boil.
After boil, bring to simmer for several hours until beans are soft. Between 4-5 Hours. (Make sure beans stay covered with water)
Cook:
Place garlic cloves, Chopped onions, chopped tomatoes and Cactus (sliced into thin strips) into frying pan with olive oil and heat until tender.
Then add beans with remaining water and simmer 15 min. Serve with or without wheat tortilla. Makes 4 1/2 cup servings at 192 calories without the tortilla
