Ingredients

    1 medium head cauliflower
    10 squirts of "I can't believe it's not butter" spray
    4 Tablespoons Maggio brand part skim ricotta cheese
    1/2 cup shredded low fat cheddar cheese, divided
    salt, pepper & garlic powder to taste

    1/4 cup Panko bread crumbs (optional)
    1 slice bacon, crisp, drained, and crumpled (optional)
    2 Tbsp per person low fat sour cream (40 cals, 2 g saturated fat (optional)
    chopped chives (optional)

Tips

Some top with crumbled bacon and/or low fat sour cream. A lower fat/calorie topping is chopped chives.

Directions

Preheat oven to 350

Wash and segment the cauliflower, Steam for 25 minutes until VERY tender. Drain well and pat dry.

Combine cauliflower, butter flavor spray and ricotta chese in mixing bowl and blend well. Taste and add salt, low fat sour cream, pepper and garlic powder to taste.(Start with 1/2 teaspoon salt and 1/8 each of pepper and garlic and go from there).

Stir in 1/4 cup low fat cheese. Pour mixture into baking dish and top with remaining shredded low fat cheese. Sprinkle bread crumbs over top.

Bake uncovered for 25 minutes.
